Instructions

  1. 1

    1. Place the shredded coconut in a small skillet and toast it over medium-low heat for 2 to 3 minutes, stirring often, until golden and fragrant. If you prefer the oven, toast it at 300°F (150°C) for 3 to 5 minutes. Let it cool for 2 minutes.

  2. 2

    2. In a blender, add the papaya, cucumber, coconut milk, plain yogurt, lime juice, honey, mint leaves, fine salt, ice, and three-quarters of the toasted coconut.

  3. 3

    3. Blend for 45 to 60 seconds, or until completely smooth and creamy. If you want a lighter texture, add a little more coconut milk and blend again for a few seconds.

  4. 4

    4. Taste the smoothie and adjust with a little more honey or a few extra drops of lime juice if you want to balance sweetness and acidity.

  5. 5

    5. Serve immediately in two chilled glasses and finish with the remaining toasted coconut on top. Garnish with a mint leaf if desired.

Chef tips

For a thicker texture, chill the papaya in the freezer for 20 minutes before blending. For a prettier presentation, moisten the rim of the glass with lime and add a little toasted coconut.

Substitutions

You can replace the honey with agave syrup for a vegan version, and the plain yogurt with coconut-based plant yogurt. Papaya can be swapped for cantaloupe if you want a milder flavor profile.
