Instructions

  1. 1

    1. If the beet is not cooked, cook it first until tender. To roast it, wrap it in foil and bake at 400°F / 200°C for 40 to 50 minutes; then let it cool completely before using. If it is already cooked and chilled, cut it into cubes.

  2. 2

    2. Add the frozen strawberries, cooked beet, ricotta cheese, orange juice, milk, shelled pistachios, honey, vanilla extract, and ice to a blender.

  3. 3

    3. Blend for 45 to 60 seconds, or until very smooth and creamy, with no visible beet or pistachio pieces remaining.

  4. 4

    4. Taste the smoothie and adjust if needed with a little more honey or an extra splash of milk for a lighter texture.

  5. 5

    5. Serve immediately in two glasses. If desired, garnish with a few chopped pistachios on top to highlight the flavor and texture.

Chef tips

For a brighter color, use oven-cooked beet and chill it well before blending. If you want an even thicker texture, slightly reduce the milk.

Substitutions

You can substitute ricotta with creamy cottage cheese, and honey with maple syrup if you prefer a different sweetness. Pistachios can be replaced with cashews, although the flavor will change.
