Instructions

  1. 1

    1. Wash the pear, remove the core and cut it into cubes. Wash the red grapes as well and strip the lemon thyme leaves from the stems.

  2. 2

    2. Place the pear, red grapes, ricotta cheese, milk, honey, lemon juice, lemon thyme leaves, ice cubes and pinch of salt into the blender jar.

  3. 3

    3. Blend for 45 to 60 seconds, until the mixture is very smooth, creamy and well chilled.

  4. 4

    4. If you prefer a lighter texture, add 1 to 2 extra tablespoons of milk and blend again for 10 more seconds.

  5. 5

    5. Serve immediately in two chilled glasses. If desired, garnish with a small lemon thyme leaf or half a grape.

  6. 6

    6. No cooking is required; if you want to chill the glasses, place them for 5 minutes in the refrigerator or 2 minutes in the freezer at 32 °F to 39 °F (0 °C to 4 °C).

Chef tips

For an even silkier texture, freeze half of the grapes for 1 hour beforehand. Use very ripe pears for natural sweetness and to avoid adding more honey.

Substitutions

You can substitute the ricotta with creamy cottage cheese or Greek yogurt, though the texture will change slightly. Honey can be replaced with maple syrup if you do not need to keep the classic flavor profile.
