Instructions

  1. 1

    1. Place the oats in a blender and pulse for 20 to 30 seconds until finely ground.

  2. 2

    2. Add the pear, pumpkin purée, kefir, honey, vanilla extract, nutmeg, cinnamon, and ice.

  3. 3

    3. Blend for 45 to 60 seconds, until the smoothie is completely creamy and uniform.

  4. 4

    4. If you want a rounder texture, let the mixture rest for 2 minutes so the oats can hydrate, then blend again for 10 seconds.

  5. 5

    5. Serve immediately in chilled glasses. For a slightly warm version, use lukewarm pumpkin purée at 104°F/40°C, without heating the kefir directly.

  6. 6

    6. Taste and adjust with a little more honey if you want it sweeter before serving.

Chef tips

For an even silkier texture, chill the pear and kefir beforehand. If the smoothie is too thick, add an extra 30 to 60 ml of kefir or cold water.

Substitutions

You can replace the honey with maple syrup for a strictly vegetarian version. Kefir can be swapped for plain drinkable yogurt, though the texture will be slightly thicker. Oats can be replaced with quinoa flakes for a gluten-free option if certified.
