    Preheat the oven to 220°C / 425°F.

  2. 2

Place the pineapple cubes on a tray and roast for 8 to 10 minutes at 220°C / 425°F, until the edges start to caramelize. Let cool slightly for 5 minutes.

  3. 3

Add the roasted pineapple, soaked and drained cashews, oat milk, ginger, frozen banana, lime juice, cinnamon, vanilla, and ice to a blender.

  4. 4

Blend for 45 to 60 seconds until very smooth and creamy.

  5. 5

Taste the smoothie and adjust with a little more oat milk if you prefer a thinner texture.

  6. 6

Serve immediately in 2 chilled glasses.

Chef tips

For deeper flavor, let the pineapple develop some color while roasting. For an extra silky texture, blend the cashews with the oat milk for 20 seconds before adding the remaining ingredients.

Substitutions

You can replace oat milk with coconut milk beverage or almond milk. Cashews can be replaced with macadamia nuts, keeping in mind the flavor will change and it will still contain tree nuts.
