Instructions

  1. 1

    1. Place the rolled oats in a small skillet and toast them for 2 minutes over medium heat, stirring constantly, until fragrant but not too brown. If you prefer to preheat the skillet, use medium heat, roughly equivalent to 350°F/175°C in culinary terms.

  2. 2

    2. Let the toasted oats cool for 2 minutes so they do not warm up the smoothie.

  3. 3

    3. Wash the green grapes and cut the fennel bulb into small pieces. Peel the pink grapefruit, separate it into segments, and remove any seeds.

  4. 4

    4. Add the pink grapefruit, green grapes, fennel, plain Greek yogurt, toasted oats, honey, lemon juice, cold water, and ice to a blender.

  5. 5

    5. Blend for 45 to 60 seconds until very smooth and creamy. If you want a lighter texture, add a little more cold water and blend again for 10 seconds.

  6. 6

    6. Taste and adjust with a little more honey if you prefer a sweeter flavor.

  7. 7

    7. Serve immediately in two chilled glasses.

Chef tips

For a finer texture, you can strain the smoothie after blending, especially if the fennel is quite fibrous. Chill the grapefruit and grapes before making it for a more refreshing result.

Substitutions

You can replace Greek yogurt with thick plain yogurt. Honey can be swapped for maple syrup if you want a different sweetness, though the flavor profile will change. If you do not have pink grapefruit, use white grapefruit and add a few extra grapes to balance it.
