Instructions

1. Brew a strong chai tea and let it cool. For a quick extraction, pour water at 95°C / 203°F over the tea, steep for 4 to 5 minutes, then chill it.
- 2
2. Lightly toast the black sesame seeds in a small skillet over medium heat for 1 to 2 minutes, stirring constantly so they do not burn. Remove and let them cool slightly.
- 3
3. Add the pear cubes, pitted dates, Greek yogurt, cooled chai tea, milk, rolled oats, cinnamon, vanilla, toasted black sesame seeds, and ice to a blender.
- 4
4. Blend for 45 to 60 seconds until very smooth and creamy. If you want a thinner texture, add 1 to 2 extra tablespoons of milk and blend again.
- 5
5. Divide the smoothie between 2 glasses and serve immediately to keep its cold, foamy texture.
Chef tips
For an even smoother texture, soak the rolled oats in the milk for 5 minutes before blending. Use a very ripe pear for natural sweetness and to avoid adding sugar.
Substitutions
You can substitute the pear with a sweet apple, the Greek yogurt with thick plain yogurt, and the milk with oat milk if you do not mind turning it into a non-dairy variation. Black sesame can be replaced with toasted white sesame, although the flavor will be milder.
