Instructions
- 1
Preheat a nonstick skillet over medium heat; if you prefer to use the oven, preheat it to 400°F / 200°C.
- 2
Place the banana slices in the hot skillet and add the honey along with half of the ground cinnamon. Cook for 2 to 3 minutes per side, until the banana is golden and lightly caramelized. If using the oven, spread the banana on a tray and bake for 6 to 8 minutes at 400°F / 200°C.
- 3
Remove the caramelized banana from the heat and let it cool for 2 minutes so it does not melt the ice when blended.
- 4
Add the diced pear, oat milk, plain Greek yogurt, black sesame paste, vanilla extract, the remaining ground cinnamon, and the ice to the blender jar.
- 5
Add the slightly cooled caramelized banana and blend for 45 to 60 seconds, until very creamy and smooth.
- 6
If the smoothie is too thick, add the water and blend again for 10 more seconds.
- 7
Serve immediately in 2 chilled glasses to keep the thick texture and the contrast between fresh pear, toasted banana, and black sesame.
Chef tips
For a deeper flavor, lightly warm the black sesame paste in the skillet for 20 seconds over very low heat before using. If you want an even colder texture, freeze the pear cubes for 30 minutes.
Substitutions
You can substitute oat milk with almond milk if you do not need a nut-free version. Honey can be replaced with maple syrup for a stricter vegetarian version without bee products. Greek yogurt can be replaced with plant-based yogurt for a dairy-free version, although the creaminess will change.
