Instructions

  1. 1

    1. Place the dates in a bowl with 120 ml of hot water at 60°C / 140°F for 2 minutes to soften them if they feel firm. Drain before using.

  2. 2

    2. Add the diced apple, dates, Greek yogurt, oat milk, tahini, rolled oats, ground cinnamon, vanilla extract, and ice to a blender jar.

  3. 3

    3. Blend for 45 to 60 seconds, until the mixture is completely smooth, creamy, and free of visible apple or date pieces.

  4. 4

    4. Taste the smoothie and, if you prefer a thinner texture, add 30 to 60 ml more oat milk and blend again for 10 seconds.

  5. 5

    5. Serve immediately in two glasses and finish with the toasted sesame seeds and an extra pinch of cinnamon on top.

Chef tips

For an even silkier texture, chill the apple and yogurt beforehand. If you want a toastier flavor, dry-toast the oats in a skillet for 1 minute over medium heat, then let them cool before adding.

Substitutions

You can replace Greek yogurt with thick plain yogurt. Oat milk can be swapped for dairy milk or almond milk if you do not need to avoid tree nuts. Red apple can be replaced with Fuji or Gala apple.
