Instructions

  1. 1

    1. Wash the mint, peel the cucumber, and slice it. Cut the melon into cubes and make sure it is well chilled for a creamier texture.

  2. 2

    2. Place the melon, cucumber, plain yogurt, cold milk, lime juice, lime zest, fresh mint, and honey into a blender.

  3. 3

    3. Add the ice cubes and blend for 45 to 60 seconds until smooth and fully combined. If you prefer a thinner smoothie, add a little more milk and blend again for 10 seconds.

  4. 4

    4. Divide the smoothie between 2 glasses and finish with the chia seeds on top. If desired, garnish with extra mint leaves and a little more lime zest.

  5. 5

    5. Serve immediately while very cold. No cooking is required; if you want to chill the glasses first, place them in the refrigerator for 5 minutes at 39 °F / 4 °C before serving.

Chef tips

Use very ripe melon for a sweeter flavor and silkier texture. For a thicker consistency, freeze part of the melon for 1 hour before blending.

Substitutions

You can replace the honey with maple syrup for a honey-free version, and swap the milk for oat or almond milk. Spearmint can be replaced with mild mint.
