Instructions

  1. 1

    1. Place the saffron threads in the hot water and let them steep for 3 minutes. If heating the water, warm it until very hot but not boiling, about 140-160 °F / 60-70 °C.

  2. 2

    2. If the sweet corn is not already cooked, cook it first until tender and let it cool completely before using.

  3. 3

    3. Add the peach chunks, cooked sweet corn, plain yogurt, almond milk, toasted almonds, honey, saffron infusion with its liquid, and ice cubes to a blender.

  4. 4

    4. Blend for 45-60 seconds until very smooth and creamy. If you prefer a lighter texture, add a little more almond milk and blend again.

  5. 5

    5. Taste the smoothie and adjust with a bit more honey if you want extra sweetness.

  6. 6

    6. Serve immediately in 2 glasses and finish with the pinch of ground cinnamon and a few extra toasted almonds if desired.

Chef tips

For a silkier texture, peel the peach before blending. If you want a deeper flavor, lightly toast the almonds in a dry skillet for 2-3 minutes over medium heat before using them.

Substitutions

You can substitute plain yogurt with Greek yogurt for a thicker result. Honey can be replaced with maple syrup. If you do not have almond milk, use regular milk or oat drink, keeping allergens and dietary tags in mind.
