Instructions
- 1
Heat 150 ml water until very hot but not boiling, about 176°F/80°C. Add the white tea, steep for 2 to 3 minutes, and strain to obtain 120 ml brewed tea. Let it cool completely.
- 2
Wash and pit the loquats until you have 180 g of flesh. Slice the banana if not already prepared.
- 3
Place the loquats, banana, Greek yogurt, almond milk, cooled white tea, almond butter, vanilla extract, cinnamon, and honey if using into a blender.
- 4
Add the ice and blend for 45 to 60 seconds, until the mixture is very smooth, thick, and silky.
- 5
Taste the smoothie and, if you want a slightly lighter texture, add 1 to 2 extra tablespoons of almond milk and blend briefly again.
- 6
Serve immediately in 2 glasses and finish with the toasted sliced almonds on top.
Chef tips
For a deeper chill, place the glasses in the refrigerator for 10 minutes before serving. If the loquats are very ripe, you may not need the honey.
Substitutions
You can replace the honey with maple syrup for a vegan version, swap the Greek yogurt for coconut or almond-based yogurt, and use cashew butter instead of almond butter if other tree nuts are acceptable.
