Instructions

1. Cook the carrot in boiling water for 6 to 7 minutes, until tender. Drain and cool completely; to speed this up, spread it on a tray and refrigerate for a few minutes.
- 2
2. In a small skillet, toast the sesame seeds over medium-low heat for 1 to 2 minutes, stirring constantly until fragrant. Remove before they burn and let them cool slightly.
- 3
3. Add the apricots, cooked and cooled carrot, plain yogurt, milk, honey, orange blossom water, ground cinnamon, and ice to a blender.
- 4
4. Add almost all of the toasted sesame seeds, reserving a small amount for finishing.
- 5
5. Blend for 45 to 60 seconds until completely smooth, creamy, and uniform. If you prefer a thinner smoothie, add a little more milk and blend briefly again.
- 6
6. Serve immediately in two glasses and finish with the reserved toasted sesame seeds on top.
Chef tips
For an even silkier texture, peel the apricots if their skin is thick. Chill the glasses for 10 minutes before serving for a more refreshing experience.
Substitutions
You can replace the honey with maple syrup for a strict vegetarian version. Plain yogurt may be swapped for Greek yogurt for a thicker result, and milk for oat drink if you want to avoid lactose, keeping in mind that allergens and dietary tags would change.
