Instructions

  1. 1

    1. Place the fresh pineapple, peeled cucumber, frozen banana, fresh mint leaves, lime juice, cold plain kefir, honey, and ice into a blender jar.

  2. 2

    2. Blend for 45 to 60 seconds, until completely smooth, creamy, and free of visible cucumber or pineapple pieces.

  3. 3

    3. Taste the smoothie and, if desired, adjust with a little more honey or a few extra drops of lime juice.

  4. 4

    4. If you prefer an even colder drink, chill the glasses for 5 minutes in the refrigerator at 39 °F / 4 °C before serving.

  5. 5

    5. Divide into 2 glasses and serve immediately, garnishing if desired with an extra mint leaf or a small piece of pineapple.

Chef tips

Use well-frozen banana for a thicker texture without needing too much ice, which can dilute the flavor.

Substitutions

You can replace the honey with agave syrup for a vegan version if you also swap the kefir for plant-based yogurt or coconut kefir. Mint can be replaced with fresh basil for a more herbal profile.
