Instructions

  1. 1

    1. Wash the persimmon, remove the stem and any seeds if needed, and cut it into cubes. Peel the mandarin and separate the segments, removing any seeds. Peel and chop the fresh ginger.

  2. 2

    2. Place the persimmon, mandarin, plain Greek yogurt, milk, rolled oats, fresh ginger, honey, and ground cinnamon in a blender.

  3. 3

    3. Add the ice and blend for 45 to 60 seconds, until very smooth and creamy.

  4. 4

    4. Taste the smoothie and, if you want it sweeter, add a little more honey and blend again for 10 seconds.

  5. 5

    5. Serve immediately in 2 chilled glasses. For a lighter texture, add an extra splash of milk and blend briefly. No cooking is required; if chilling the glasses, do so in the refrigerator at 39-41 °F / 4-5 °C before serving.

Chef tips

Use very ripe persimmon for the silkiest texture and natural sweetness. If your blender is less powerful, let the oats soak in the milk for 5 minutes before blending.

Substitutions

You can replace the honey with maple syrup for a strict vegetarian version. Greek yogurt can be swapped for thick plain yogurt, and mandarin can be replaced with clementine.
