Instructions

1. Heat a small skillet over medium heat for 1 minute. Add the cooked sweet corn and stir for 2 minutes to evaporate excess moisture without letting it brown too much. Add the vanilla extract during the last 15 seconds and toss to perfume the corn. Remove from the heat and let it cool slightly for 3 minutes; the skillet will be around 160-180 °C / 320-356 °F.

2. Place the diced mango, warm vanilla-scented corn, plain Greek yogurt, milk, ice cubes, finely grated lime zest, lime juice, honey, and ground cinnamon, if using, into a blender.

3. Blend for 45 to 60 seconds until completely smooth, creamy, and chilled. If you prefer a lighter texture, add 1 to 2 extra tablespoons of milk and blend again for 10 seconds.

4. Taste and adjust, if needed, with a few extra drops of lime juice or a little more honey. Serve immediately in 2 chilled glasses.
Chef tips
For a finer texture, use very tender corn and blend a little longer. If the mango is very sweet, reduce the honey to keep the flavor balanced.
Substitutions
You can swap the milk for oat or soy drink; if you do, adjust allergens and dietary tags accordingly. Greek yogurt can be replaced with thick plain yogurt.
