Instructions

1. Place the toasted hazelnuts in a small skillet over very low heat for 2 minutes to refresh their aroma, stirring often so they do not burn. If preferred, you can also warm them briefly in an oven at 300°F / 150°C. Let them cool slightly for 1 minute.

2. Add the ripe pear, Medjool dates, toasted hazelnuts, plain yogurt, milk, vanilla extract, ground cinnamon, ice, and fine salt to the blender jar.
- 3
3. Blend on high speed for 45 to 60 seconds, until the smoothie is completely smooth, thick, and creamy. If you want it thinner, add a little more milk and blend again for 10 seconds.

4. Taste the smoothie and adjust the texture with a little more ice for a colder, thicker consistency, or a little more milk for a lighter consistency.

5. Serve immediately in 2 glasses. If desired, garnish with chopped toasted hazelnuts on top and an extra pinch of ground cinnamon.
Chef tips
For an even silkier texture, soak the dates in hot water for 5 minutes before blending and drain them well. Use very ripe pears for natural sweetness and better aroma.
Substitutions
You can substitute the plain yogurt with lactose-free yogurt if needed. The milk can be replaced with oat milk or soy milk, keeping in mind that allergens and dietary tags will change. Hazelnuts can be replaced with toasted almonds for a different flavor profile.
