Instructions

  1. 1

Heat water until very hot but not fully boiling, about 205°F/96°C, steep the black tea for 4 to 5 minutes, strain it, and let it cool completely.

  2. 2

Add the chilled black tea, apricots, Greek yogurt, almond milk, almond butter, date syrup, quick oats, vanilla extract, ground cinnamon, and ice to a blender.

  3. 3

Blend for 45 to 60 seconds until very smooth, creamy, and fully combined.

  4. 4

Taste the smoothie and, if you want it sweeter, add a little more date syrup and blend for 10 more seconds.

  5. 5

Pour into two chilled glasses and finish with the toasted sliced almonds on top for texture and aroma.

Chef tips

For an even colder, thicker texture, freeze the apricots in a single layer for 1 to 2 hours before blending.

Substitutions

You can replace the Greek yogurt with plant-based yogurt for a dairy-free version, and swap almond butter for cashew butter if you do not need to avoid other tree nuts. If you do not have date syrup, use honey or maple syrup, keeping in mind the flavor profile will change.
