Instructions
- 1
Preheat the oven to 200°C / 400°F. Place the apricots on a small tray, toss them with the honey and olive oil, and roast for 15 minutes at 200°C / 400°F until tender and lightly caramelized.
- 2
While the apricots roast, heat the water until hot but not boiling, about 80°C / 176°F. Add the white tea, turn off the heat, and steep for 4 minutes. Strain and cool the infusion until lukewarm or chilled.
- 3
Reserve 4 roasted apricot halves for garnish. Transfer the remaining roasted apricots to a blender with the white tea infusion, plain yogurt, black sesame paste, maple syrup, lemon juice, fine salt, and half of the ice.
- 4
Blend until very smooth and creamy. Add the remaining ice and blend again briefly to create a cold, thick yet drinkable texture.
- 5
Taste and adjust with a little more maple syrup if you want it sweeter, or a few extra drops of lemon juice for more brightness.
- 6
Serve immediately in 4 glasses. Garnish each glass with a roasted apricot half and a sprinkle of toasted black sesame seeds.
Chef tips
For a lighter texture, add 60 to 120 ml / 1/4 to 1/2 cup extra cold water at the end. Chill the glasses for 10 minutes before serving to keep the drink colder longer.
Substitutions
You can replace the plain yogurt with coconut yogurt for a dairy-free version; in that case, also swap the honey for more maple syrup to make it vegan. If you cannot find black sesame paste, use tahini and add 1 extra teaspoon of toasted black sesame seeds.
