Instructions

1. In a small saucepan, combine the purple figs, 480 ml (2 cups) water, sugar, lemon zest, and salt. Cook over medium heat until it reaches a gentle boil, about 95-100 °C / 203-212 °F, for 8 minutes, lightly mashing the figs to release their juices.

2. Remove the saucepan from the heat, add the Earl Grey tea, and let it steep for 4 minutes in the hot liquid, ideally at 90-95 °C / 194-203 °F.
- 3
3. Strain the mixture, pressing on the solids to extract as much flavor as possible. Stir in the fresh lemon juice and the remaining 240 ml (1 cup) water. Let it cool to room temperature, then refrigerate until thoroughly chilled.

4. For the foam, place the cold oat milk and maple syrup in a tall glass or narrow container. Froth with a handheld frother or immersion blender for 30-60 seconds until light and foamy.
- 5
5. Divide the ice cubes among 4 glasses. Pour the chilled fig, tea, and lemon drink over the ice, leaving some room at the top.
- 6
6. Top each glass with the oat foam and serve immediately. If desired, gently stir the foam in before drinking to blend the layers.
Chef tips
For a deeper flavor, chill the base for at least 1 hour before serving. Use fully ripe figs for better natural sweetness and color.
Substitutions
You can substitute the sugar with the same amount of cane sugar. If you do not have oat milk, use almond milk, but that would add tree nuts to the allergens. Earl Grey can be replaced with a mild black tea plus an extra strip of lemon zest.
