Instructions

  1. 1

    1. Preheat the oven to 220°C / 425°F.

  2. 2

    2. Place the quartered oranges and sliced carrot on a tray. Add the fresh ginger and 20 g honey. Sprinkle with 1 g ground cinnamon and toss to coat.

  3. 3

    3. Roast for 20 minutes at 220°C / 425°F, until the oranges are lightly caramelized and the carrot is tender.

  4. 4

    4. Remove from the oven and let cool for 5 minutes. Squeeze out the roasted orange flesh, discarding seeds and any overly burnt peel if needed.

  5. 5

    5. Transfer the roasted orange flesh, roasted carrot, roasted ginger, water, and lemon juice to a blender. Blend until very smooth.

  6. 6

    6. Strain the drink through a fine sieve or nut milk bag for a cleaner texture. Chill until very cold, at least 10 minutes.

  7. 7

    7. For the light foam, whisk the pasteurized egg white with the remaining 20 g honey and 1 g ground cinnamon until airy and foamy, 1 to 2 minutes.

  8. 8

    8. Divide the ice among 4 glasses. Pour the chilled drink over the ice and finish each glass with a spoonful of cinnamon foam.

  9. 9

    9. Serve immediately and, if desired, gently stir the foam into the drink before sipping.

Chef tips

For deeper flavor, let the oranges develop nicely browned edges without burning. If you prefer a completely smooth texture, strain twice.

Substitutions

You can replace the honey with maple syrup for a vegan version and omit the egg white foam, using 60 ml (1/4 cup) aquafaba whisked with the cinnamon instead. Lime can replace lemon for a brighter acidity.
