Instructions
- 1
1. Bring 500 ml water to a gentle boil in a small saucepan, about 212°F / 100°C. Remove from the heat, add the green tea, and let it steep for 3 minutes.
- 2
2. Strain the tea and, while still warm, add the sliced ginger, honey, and lime zest. Let it rest for 5 minutes so the ginger can infuse the tea.
- 3
3. Add the remaining 250 ml water to cool the mixture slightly. Stir in the lime juice and the pinch of salt, mixing well.
- 4
4. Place the mango, mint leaves, ice, and the ginger green tea infusion in a blender. Blend until smooth and thoroughly chilled.
- 5
5. Taste and adjust with a little more honey or lime juice if desired. Serve immediately in glasses with extra ice and garnish with more mint leaves.
Chef tips
For a stronger flavor, chill the tea infusion for 10 minutes before blending. If you prefer a lighter texture, add 100 to 150 ml more cold water.
Substitutions
You can replace the honey with agave syrup for a vegan version. Mango can be swapped for ripe peach or papaya, and mint can be replaced with young basil for a different flavor profile.
