Instructions
- 1
Heat 500 ml water in a small saucepan until hot but not boiling, about 175°F / 80°C. Remove from the heat, add the green tea, and steep for 3 minutes. Strain or remove the tea bags and let the tea cool completely.
- 2
En un tazón pequeño, mezcla las semillas de chía con 120 ml de agua y deja reposar 10 minutos hasta que se hidraten y formen una textura ligeramente gelatinosa.
- 3
In a blender, combine the diced pear, passion fruit pulp, lemon juice, honey or agave syrup, lemon zest, mint leaves, and the remaining 130 ml water. Blend until smooth.
- 4
Pour the pear and passion fruit mixture through a fine sieve into a pitcher, pressing well to extract as much liquid and pulp as possible.
- 5
Add the cooled green tea, the hydrated chia, and 300 g ice to the pitcher. Stir well until the drink is very cold.
- 6
Serve over extra ice and decorate with additional mint leaves if desired.
Chef tips
For a cleaner flavor, strain the pear and passion fruit mixture twice. If you prefer a lighter texture, reduce the chia to 1 tablespoon.
Substitutions
You can use white tea instead of green tea for a more delicate profile. Honey can be replaced with agave syrup for a vegan version.
