Instructions

1. Heat 300 ml water until very hot but not boiling, about 175°F/80°C. Add the white tea and steep for 4 minutes. Strain and let it cool completely.
- 2
2. Place the lime halves cut-side down on a very hot skillet or griddle over medium-high heat, about 400°F/205°C surface temperature, for 2 to 3 minutes until lightly charred. Let them cool slightly, then squeeze out the juice.
- 3
3. In a blender, add the papaya, charred lime juice, fresh mint, sugar, salt, and 250 ml cold water. Blend until very smooth.
- 4
4. Pour the papaya mixture through a fine sieve into a pitcher to remove fibers if you want a lighter texture.
- 5
5. Add the cooled white tea to the pitcher and stir well to combine.
- 6
6. Divide the ice among 4 glasses. Pour in the papaya-tea mixture until each glass is about three-quarters full.
- 7
7. Top each glass with chilled sparkling water and stir gently. Garnish with extra fresh mint and serve immediately.
Chef tips
For deeper flavor, chill the papaya and tea mixture for 10 minutes before serving. If you prefer a less sweet drink, reduce the sugar to 25 g.
Substitutions
You can replace the sugar with agave syrup or coconut sugar. Mint can be swapped for spearmint. If you do not have white tea, use a mild chamomile infusion, though the flavor profile will change.
