Instructions
- 1
1. Heat enough water and brew 500 ml of oolong tea according to the package directions. If boiling water, bring it to about 194°F / 90°C before steeping. Let the tea cool completely in the refrigerator.
- 2
2. Place the chopped cucumber, white grapes, lemon juice, basil leaves, and honey in a blender. Blend until very smooth.
- 3
3. Strain the cucumber and grape mixture into a pitcher to remove the thicker pulp and create a cleaner texture.
- 4
4. Add the chilled oolong tea to the pitcher and stir well until all the flavors are combined.
- 5
5. Add the sparkling mineral water just before serving and stir gently to keep the bubbles lively.
- 6
6. Fill 4 glasses with ice and divide the drink among them. Garnish each glass with thin lemon slices and a few extra fresh basil leaves.
- 7
7. Serve immediately, well chilled, ideally at 37 to 41°F / 3 to 5°C.
Chef tips
For a deeper flavor, lightly bruise the basil before blending. If you want a less sweet drink, reduce the honey slightly.
Substitutions
You can substitute the honey with agave syrup for a vegan version. Oolong tea can be replaced with white tea if you prefer a more delicate profile.
