Instructions
- 1
1. In a small saucepan, combine the diced pear, tamarind pulp, 500 ml water (2 1/8 cups), and star anise. Bring to a gentle boil over medium heat, about 212°F/100°C, then lower the heat and cook for 8 minutes so the pear softens and the tamarind dissolves.
- 2
2. Remove the saucepan from the heat. Add the oolong tea, cover, and let it steep for 4 minutes while the mixture cools slightly. Then remove the star anise.
- 3
3. Transfer the mixture to a blender and blend until smooth. Strain through a fine sieve to remove fibers and solids, pressing well to extract the liquid.
- 4
4. Pour the strained base into a pitcher. Add the remaining 400 ml water (1 2/3 cups), honey, and lemon juice. Stir until the honey is fully dissolved.
- 5
5. Let it cool to room temperature, then refrigerate until thoroughly chilled, ideally for at least 30 minutes. Serve over the ice and garnish each glass with thin pear slices.
- 6
6. Stir gently before serving to redistribute the flavors and enjoy very cold.
Chef tips
For deeper flavor, let the chilled drink rest in the refrigerator for 2 hours before serving. If you prefer a lighter texture, add an extra 100 to 150 ml cold water.
Substitutions
You can replace the honey with agave syrup for a vegan version. Pear can be swapped for yellow apple, and oolong tea can be replaced with mild black tea for a bolder profile.
