Instructions

  1. 1

Preheat the oven to 220 °C / 425 °F. Place the cabbage wedges on a large baking tray. Toss them with 30 ml (2 tbsp) olive oil, 4 g (3/4 tsp) sea salt, 1 g (1/2 tsp) black pepper, and 2 g (3/4 tsp) smoked paprika.

  2. 2

Roast the cabbage for 30 to 35 minutes at 220 °C / 425 °F, carefully turning the wedges halfway through, until tender and deeply browned at the edges.

  3. 3

While the cabbage roasts, make the savory granola. In a bowl, mix the rolled oats, pumpkin seeds, sesame seeds, fresh rosemary, 15 ml (1 tbsp) olive oil, maple syrup, 1 g (1/4 tsp) salt, 1 g (1/4 tsp) black pepper, and 2 g (3/4 tsp) smoked paprika. Spread the mixture on a small tray or in an open corner of the main tray.

  4. 4

Bake the savory granola at 220 °C / 425 °F for 8 to 10 minutes, stirring once, until toasted and crisp. Remove and let it cool so it firms up.

  5. 5

For the bean cream, heat 15 ml (1 tbsp) olive oil in a small saucepan over medium heat. Add the chopped garlic and cook for 30 seconds without browning. Add the cannellini beans, lemon zest, 30 ml (2 tbsp) lemon juice, water, nutritional yeast, 2 g (1/4 tsp) salt, and a pinch of black pepper. Cook for 3 to 4 minutes, then blend until smooth; adjust with a little more water if you want a looser texture.

  6. 6

In a skillet, heat the remaining 15 ml (1 tbsp) olive oil over medium heat. Add the red onion and cook for 2 minutes. Add the pear, cumin, cinnamon, 1 g (1/4 tsp) salt, and apple cider vinegar. Cook for 4 to 5 minutes, stirring, until the pear is tender but still holds its shape.

  7. 7

To serve, spread the bean cream onto plates, place the roasted cabbage wedges on top, add the warm pear and onion mixture, and finish with the savory pepita granola over everything.

  8. 8

Serve immediately, making sure each portion includes bean cream, roasted cabbage, spiced pears, and crunchy granola.

Chef tips

For an extra silky bean cream, blend it in a high-speed blender and warm it again for 1 minute before serving. The savory granola can be made ahead and kept in an airtight jar for 3 days.

Substitutions

You can swap cannellini beans for any cooked white beans. Pear can be replaced with a firm apple. If you need a gluten-free version, use certified gluten-free oats.
