Instructions

  1. 1

Preheat the oven to 425°F / 220°C. Slice off the top of the garlic head to expose the cloves slightly, place it on a small piece of parchment or foil, drizzle with 1 teaspoon olive oil, and wrap it. Set aside.

  2. 2

Place the cabbage wedges and chickpeas on a large sheet pan, keeping them in separate areas. Drizzle the cabbage with 3 tablespoons olive oil and season with 1 teaspoon salt and 1/2 teaspoon black pepper.

  3. 3

Toss the chickpeas with 1 tablespoon olive oil, smoked paprika, ground coriander, 1 teaspoon ground cumin, red pepper flakes if using, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Spread them in a single layer. Add the wrapped garlic to the pan.

  4. 4

Roast for 30 to 35 minutes at 425°F / 220°C, stirring the chickpeas halfway through and carefully turning the cabbage wedges after 20 minutes. The cabbage should be tender with browned edges, and the chickpeas should be crisp.

  5. 5

Meanwhile, make the quinoa. Rinse it well and place it in a saucepan with 2 cups water, the finely minced garlic clove, 1 tablespoon olive oil, 1/2 teaspoon salt, and the remaining 1/2 teaspoon cumin. Bring to a boil, reduce the heat, cover, and cook for 15 minutes.

  6. 6

Remove the quinoa from the heat and let it rest, covered, for 5 minutes. Fluff with a fork and mix in the lemon zest, 2 tablespoons lemon juice, and half of the chopped parsley.

  7. 7

Make the cream. Squeeze the roasted garlic cloves into a blender cup or bowl. Add the tahini, 2 tablespoons lemon juice, 3 tablespoons water, 1 tablespoon olive oil, a pinch of salt, and a few grinds of black pepper. Blend or whisk until smooth; if too thick, add 1 more tablespoon water.

  8. 8

To serve, spread the lemon quinoa on a platter or divide among plates. Top with the roasted cabbage wedges and spoon over the crisp chickpeas. Finish with the roasted garlic tahini cream, the remaining parsley, and the toasted pumpkin seeds.

Chef tips

Dry the chickpeas very well before roasting so they crisp properly. If the cabbage browns too quickly, loosely cover it for the last few minutes. Tahini sauce thickens as it sits; loosen it with a few drops of water before serving.

Substitutions

You can use red cabbage instead of green cabbage. Parsley can be replaced with cilantro or dill. Pumpkin seeds can be swapped for sunflower seeds if preferred.
