Instructions

  1. 1

Preheat the oven to 220 °C / 425 °F. Line a large baking tray with parchment paper or lightly grease it.

  2. 2

Remove the outer leaves from the cauliflower and cut 4 thick steaks from the center, about 2 to 3 cm / 1 inch thick. Reserve any loose florets to roast alongside the steaks.

  3. 3

In a small bowl, mix 3 tablespoons olive oil, 1 teaspoon smoked paprika, 1 teaspoon ground cumin, the garlic powder, 1 teaspoon salt, and 1/4 teaspoon black pepper. Brush this mixture over the cauliflower steaks and the reserved florets.

  4. 4

Place the cauliflower on the tray and roast for 15 minutes at 220 °C / 425 °F. Carefully flip and continue roasting for 12 to 15 minutes more, until browned on the edges and tender in the center.

  5. 5

While the cauliflower roasts, heat 1 tablespoon olive oil in a medium skillet over medium heat. Add the red onion and cook for 4 to 5 minutes until softened.

  6. 6

Add the fresh garlic, tomato paste, the remaining 1 teaspoon smoked paprika, the remaining 1/2 teaspoon ground cumin, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute, stirring, until fragrant.

  7. 7

Stir in the cooked lentils and vegetable broth. Simmer over medium-low heat for 6 to 8 minutes, stirring occasionally, until the lentils are heated through and slightly saucy. Turn off the heat and add 1 tablespoon lemon juice.

  8. 8

Place the green peas in a saucepan of boiling water for 2 to 3 minutes, until tender and bright green. Drain well.

  9. 9

Add the cooked peas to a blender or food processor with the fresh mint, 1 tablespoon lemon juice, lemon zest, 1 tablespoon olive oil, and 1/2 teaspoon salt. Blend until smooth. If needed, add the water a little at a time to adjust the texture.

  10. 10

In a small skillet, heat the remaining 2 tablespoons olive oil over medium-low heat. Add the sliced almonds and red pepper flakes, if using. Cook for 2 to 3 minutes, stirring, until the almonds are golden. Remove from the heat and add the remaining 1 tablespoon lemon juice.

  11. 11

To serve, spread the pea purée onto plates. Set the roasted cauliflower steaks and reserved florets on top. Spoon over the spiced lentils and finish with the crunchy almond oil. Serve immediately.

Chef tips

For sturdier cauliflower steaks, use a very fresh cauliflower and cut through the center without removing too much core. The pea purée can also be made ahead and gently reheated.

Substitutions

You can replace the almonds with sunflower seeds if you want to avoid tree nuts. The mint can be swapped for fresh basil for a milder flavor profile.
