Instructions
- 1
1. Place the conference pear in a blender with 30 ml (2 tbsp) of the key lime juice and the fine salt. Blend until smooth. Chill until needed.
- 2
2. In a small saucepan, combine the sugar, water, and fresh rosemary. Cook over medium heat until it reaches a gentle boil, about 5 to 6 minutes, bringing the liquid to about 212°F/100°C. Remove from the heat and let it steep for 2 more minutes.
- 3
3. Strain the syrup to remove the rosemary and let it cool until lukewarm or cold before mixing into the drink.
- 4
4. In a pitcher, combine the pear puree, the remaining key lime juice, and the cooled rosemary syrup. Stir well until fully blended.
- 5
5. Add the ice to the pitcher or divide it among 4 glasses. Pour the chilled water kefir over the mixture and stir gently to keep the fizz.
- 6
6. Serve immediately and garnish each glass with a small sprig of fresh rosemary. For a bolder flavor, give it a light stir before drinking.
Chef tips
Use very ripe pears for natural sweetness and a silkier texture. Chill the pitcher and glasses before serving to help preserve the bubbles.
Substitutions
You can replace conference pear with Bartlett or Anjou pear. If you do not have water kefir, use sparkling water, though the flavor will be less complex. Rosemary can be swapped for a smaller amount of fresh thyme.
