Instructions
- 1
1. In a small saucepan, combine 120 ml water, sugar, curry leaves, lime zest, and salt. Cook over medium heat for 5 to 7 minutes until the sugar fully dissolves and the liquid becomes fragrant. There is no need for a hard boil; keep it at a gentle simmer around 195 to 205 °F (90 to 96 °C).
- 2
2. Remove the saucepan from the heat and let the syrup steep for 5 more minutes. Then strain and cool completely.
- 3
3. Place the green pineapple in a blender with the remaining 60 ml water and the lime juice. Blend until smooth and even.
- 4
4. Strain the pineapple mixture if you want a lighter texture, then mix it with the cooled curry leaf syrup.
- 5
5. Fill 4 glasses with ice and divide the pineapple-lime base among them.
- 6
6. Top each glass with well-chilled sparkling water and stir gently so it stays fizzy.
- 7
7. Garnish with thin lime slices and serve immediately, very cold, ideally between 36 and 40 °F (2 and 4 °C).
Chef tips
For stronger fizz, chill the glasses for 10 minutes before serving. For a more herbal flavor, lightly bruise the curry leaves before steeping them.
Substitutions
You can replace the sugar with the same amount of coconut sugar, though it will change the color. If you do not have lime, use mild green lemon, but the flavor will be less aromatic. Ripe pineapple also works, though the drink will be sweeter.
