Instructions
- 1
1. In a small saucepan, combine the tamarind pulp with 250 ml water and the brown sugar. Cook over medium heat for 8 to 10 minutes, until the pulp softens and the liquid becomes flavorful. If using temperature control, keep it at a gentle simmer around 195-205 °F / 90-96 °C.
- 2
2. Remove from the heat and let it cool for 5 minutes. Strain well, pressing firmly to extract a smooth tamarind concentrate. Discard the remaining fibers and seeds.
- 3
3. Place the pear in a blender with the lemon juice, chilled green tea, and purple basil leaves. Blend until smooth and aromatic.
- 4
4. Add the strained tamarind concentrate to the blender and pulse briefly to combine without losing too much of the basil aroma.
- 5
5. Fill 4 glasses with ice, using about 100 g per glass.
- 6
6. Divide the tamarind, pear, and tea mixture among the glasses, filling each a little over halfway.
- 7
7. Top each glass with well-chilled sparkling water and stir gently with a long spoon to preserve the fizz.
- 8
8. Garnish with extra purple basil leaves and serve immediately.
Chef tips
For a smoother texture, you can also strain the blended pear mixture before serving. Use very ripe pears for better natural sweetness and aroma.
Substitutions
You can substitute the pear with a mild green apple for a crisper profile. Purple basil can be replaced with regular basil if unavailable. Brown sugar may be replaced with fine panela or white sugar.
