1. Heat 250 ml (1 cup) water to 80°C / 176°F; do not let it boil. Remove from the heat, add the green tea, and steep for 3 minutes. Strain and let the infusion cool.

2. In a small saucepan, combine the chopped nectarines, sugar, and 250 ml (1 cup) water. Cook over medium heat until the mixture reaches a gentle simmer, about 95°C / 203°F, for 6 to 7 minutes, until the fruit is very tender.

3. Remove the saucepan from the heat and add the fresh basil. Let it rest for 2 minutes to infuse.
- 4
4. Blend the nectarine mixture with a blender until smooth. Strain if you prefer a lighter texture.
- 5
5. In a large pitcher, combine the nectarine puree or nectar with the cooled green tea infusion, lime juice, and orange blossom water. Stir well.
- 6
6. Fill 4 glasses with the ice. Divide the nectarine-tea mixture among the glasses, leaving some room at the top.
- 7
7. Top each glass with very cold sparkling water and stir gently. Garnish with thin lime slices and extra basil leaves. Serve immediately.
Chef tips
For a deeper flavor, chill the nectarine-tea base for 1 hour before adding the sparkling water. Use very ripe nectarines for natural sweetness and better aroma.
Substitutions
You can substitute the nectarine with yellow peach. Basil can be replaced with mint, though the flavor profile will change. Sugar may be replaced with simple syrup at an equivalent sweetness level.
