Instructions
- 1
Preheat a dry skillet over medium heat or the oven to 350°F / 175°C. Toast the shredded coconut for 3 to 5 minutes, stirring often, until golden and fragrant. Let it cool.
- 2
Place the white rice in a bowl with 500 ml water (2 cups), the cinnamon stick, and the chopped dates. Let soak for 120 minutes at room temperature.
- 3
Remove the cinnamon stick and transfer the soaked rice, dates, and soaking liquid to a blender. Add the toasted coconut, lime zest, lime juice, vanilla extract, salt, and the remaining 500 ml water (2 1/4 cups). Blend for 1 to 2 minutes until very smooth.
- 4
Strain the mixture through a fine-mesh sieve, a nut milk bag, or clean cheesecloth, pressing well to extract all the liquid. Discard or save the solids for another use.
- 5
Refrigerate the drink for 5 minutes so it becomes nicely chilled. Stir before serving, as slight settling is natural.
- 6
Divide the ice among 4 glasses and pour the coconut, date, and lime horchata over the ice. Serve immediately.
Chef tips
If you want a lighter texture, add 100 to 150 ml extra cold water before serving. For a deeper aroma, let the strained drink rest in the refrigerator for an additional 20 minutes.
Substitutions
You can use jasmine rice instead of long-grain white rice. Lime can be replaced with lemon for a softer citrus profile. The cinnamon stick can be swapped for 1/4 tsp ground cinnamon, added during blending.
