Instructions
- 1
Preheat the oven to 220 °C / 425 °F.
- 2
Place the peach wedges on a small tray, coat them with 1 tablespoon of the honey, and roast for 18 to 20 minutes at 220 °C / 425 °F, until tender with lightly browned edges.
- 3
While the peaches roast, combine the saffron threads with the hot water in a small cup and let steep for 10 minutes.
- 4
Remove the peaches from the oven and let them cool for 10 minutes, until warm or room temperature.
- 5
In a blender, add the roasted peaches, saffron infusion, plain yogurt, cold milk, remaining honey, lemon juice, ground cardamom, and ice.
- 6
Blend for 45 to 60 seconds until very smooth, cold, and lightly frothy.
- 7
Taste and adjust with a few more drops of lemon juice or a little more honey if desired, then blend 10 seconds more to combine.
- 8
Serve immediately in 4 glasses, garnish with the chopped pistachios, and add extra ice if desired for an even colder presentation.
Chef tips
For a thicker texture, use Greek-style yogurt and reduce the milk to 180 ml. If you prefer a lighter drink, add 60 to 120 ml more milk and blend again.
Substitutions
You can replace the honey with maple syrup. Pistachios can be swapped for chopped almonds, keeping the tree nut allergen in mind. If you do not want to use cardamom, omit it and let the saffron remain the main flavor.
