Instructions

  1. 1

Preheat the oven to 220°C / 425°F. Place the red bell peppers on a baking tray cut side up. Rub them with 1 tablespoon olive oil, season with 1/2 teaspoon salt and 1/4 teaspoon black pepper, and set aside.

  2. 2

In a bowl, mix the cooked quinoa with 1 tablespoon olive oil, 1 teaspoon ground cumin, smoked paprika, dried oregano, a pinch of salt, and the red pepper flakes if using. Spread the quinoa on a second tray in a thin layer.

  3. 3

Roast the peppers and quinoa at the same time for 20 to 25 minutes at 220°C / 425°F, stirring the quinoa halfway through, until the peppers are tender with browned edges and the quinoa is crisp in spots.

  4. 4

Meanwhile, heat 1 tablespoon olive oil in a large skillet over medium heat. Add the yellow onion and cook for 5 minutes until softened. Stir in 3 chopped garlic cloves and cook for 30 seconds more.

  5. 5

Add the white beans, 1 teaspoon ground cumin, 1 tablespoon lemon juice, 60 ml / 1/4 cup water, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 4 to 5 minutes, lightly mashing a small portion of the beans to make them creamier. Keep warm.

  6. 6

For the sauce, add the sun-dried tomatoes, the reserved 2 tablespoons oil from the tomatoes, 1 tablespoon olive oil, 2 garlic cloves, vegetable broth, lemon zest, the remaining 2 tablespoons lemon juice, half of the fresh basil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper to a blender. Blend until smooth.

  7. 7

Transfer the sauce to a small saucepan and warm it over low heat for 2 to 3 minutes, without letting it boil hard, just until warm and fragrant.

  8. 8

To serve, spoon the cumin beans onto plates or a large platter. Set the roasted pepper halves on top, lightly filling the center of each with some of the crispy quinoa and scattering the rest over the dish.

  9. 9

Finish with the warm sun-dried tomato basil sauce and garnish with the remaining fresh basil, chopped or torn. Serve immediately.

Chef tips

For crispier quinoa, spread it very well and use cooked quinoa that has been chilled overnight. If your blender needs more liquid for the sauce, add 1 to 2 extra tablespoons of vegetable broth.

Substitutions

You can use cannellini, navy beans, or small butter beans. Basil can be replaced with fresh parsley for a more herbal profile. If you do not have oil-packed sun-dried tomatoes, use rehydrated dry sun-dried tomatoes and add 2 extra tablespoons olive oil to the sauce.
