Instructions

  1. 1

    Preheat the oven to 220 °C / 425 °F.

  2. 2

Place the cucumber on a tray, toss it with the brown sugar and sea salt, and roast for 15 minutes at 220 °C / 425 °F until tender and lightly golden around the edges.

  3. 3

Remove the cucumber from the oven and let it cool for 10 minutes, until just warm.

  4. 4

Transfer the roasted cucumber to a blender with the water, lime juice, lime zest, and fresh mint. Blend until smooth.

  5. 5

Strain the mixture if you prefer a finer texture and pour it into a pitcher.

  6. 6

Add the chia seeds, stir well, and let stand for 5 minutes so they lightly hydrate.

  7. 7

Divide the ice among 4 glasses, pour the refresher over it, and finish with extra fresh mint leaves. Serve immediately.

Chef tips

If you prefer a less sweet drink, reduce the brown sugar by half. For a cleaner texture, strain twice before adding the chia.

Substitutions

You can substitute spearmint or regular mint for the fresh mint. Brown sugar can be replaced with coconut sugar. Lime can be swapped for lemon, although the flavor will be brighter and less floral.
