Instructions

1. In a small saucepan, combine the blood orange slices and juice, lightly crushed white grapes, sugar, water, and rosemary sprigs.
- 2
2. Bring the mixture over medium heat until it just reaches a gentle boil, about 195-205°F (90-96°C). Cook for 8 minutes, gently pressing the grapes with a spoon to release more flavor.
- 3
3. Remove from the heat, add the vanilla extract, and let it steep for 2 more minutes.
- 4
4. Strain the syrup, pressing well on the fruit to extract the liquid. Discard the solids and let the syrup cool to room temperature.
- 5
5. Stir the lemon juice into the cooled syrup and mix well.
- 6
6. Divide the ice among 4 glasses. Add about 3 tablespoons of syrup to each glass.
- 7
7. Top each glass with chilled sparkling water and stir gently so the drink keeps its bubbles.
- 8
8. Garnish with the reserved blood orange slices and, if desired, a small rosemary sprig. Serve immediately.
Chef tips
For deeper flavor, chill the syrup for 30 minutes before mixing with the sparkling water. If you prefer a less sweet drink, use only 1/4 cup sugar in the syrup.
Substitutions
You can substitute blood orange with red-fleshed orange or a mix of orange and grapefruit. Rosemary can be replaced with fresh thyme for a different herbal profile. Sparkling water can be swapped for mild tonic water if you want a lightly bitter finish.
