Instructions

  1. 1

    1. Preheat the oven to 200°C / 400°F.

  2. 2

    2. Place the strawberries on a small baking tray, add the honey and crushed pink peppercorns, and toss to coat evenly.

  3. 3

    3. Roast the strawberries for 18 to 20 minutes at 200°C / 400°F, until very juicy and slightly concentrated.

  4. 4

    4. Remove the tray from the oven and let the roasted strawberries cool for 10 minutes at room temperature.

  5. 5

    5. Transfer the roasted strawberries and all their juices to a blender. Add the rosewater, lemon juice, and cold water. Blend until smooth.

  6. 6

    6. Strain the mixture through a fine sieve to remove seeds and larger peppercorn bits if you want a smoother texture.

  7. 7

    7. Divide the ice among 4 glasses. Pour the strawberry mixture into the glasses and top each one with well-chilled sparkling water.

  8. 8

    8. Stir gently, garnish with thin lemon slices and fresh mint leaves, and serve immediately.

Chef tips

For a deeper flavor, chill the strawberry base in the refrigerator for 30 to 60 minutes before serving. Do not add too much rosewater, as it can easily overpower the drink.

Substitutions

You can replace the honey with agave syrup for a vegan version. If you do not have pink peppercorns, use a small pinch of freshly ground black pepper for a different but pleasant profile. Mint can be replaced with fresh basil.
