Instructions

1. In a small saucepan, combine the water, sugar, sage leaves, and lime zest. Bring over medium heat until it just reaches a gentle boil, about 195-212 °F (90-100 °C), stirring to dissolve the sugar.
- 2
2. Remove the saucepan from the heat and let it steep for 8 minutes so the sage can infuse the syrup. Strain and cool completely.
- 3
3. Add the golden kiwi, plain kefir, lime juice, half of the ice, and all of the chilled sage-lime syrup to a blender. Blend until smooth and frothy.
- 4
4. Taste the drink and adjust with a little more lime juice or a few tablespoons of sparkling water if you prefer a lighter texture.
- 5
5. Divide the remaining ice among 4 glasses. Pour in the kiwi-kefir mixture until each glass is about three-quarters full.
- 6
6. Top each glass with well-chilled sparkling water and stir gently with a spoon to keep some of the fizz.
- 7
7. Garnish with a small sage leaf if desired and serve immediately, very cold.
Chef tips
For a smoother texture, strain the blended kiwi mixture before adding the sparkling water. If you want a stronger herbal note, chill the sage syrup for 30 minutes before straining.
Substitutions
You can substitute golden kiwi with green kiwi for a tarter flavor. The kefir can be replaced with plain drinkable yogurt thinned with a little cold water, though the drink will be less light.
