Instructions

  1. 1

    1. Cut 1 lime in half and place it cut-side down on a very hot skillet or griddle for 2 to 3 minutes, until lightly charred and fragrant. If preferred, roast it in the oven at 425°F (220°C) for 3 to 5 minutes. Let it cool slightly.

  2. 2

    2. Squeeze the charred lime and the remaining lime to collect the juice. Remove any seeds if needed.

  3. 3

    3. Add the galia melon, coconut water, lime juice, fresh mint, honey or agave syrup, salt, and ice to a blender.

  4. 4

    4. Blend for 45 to 60 seconds until very cold, smooth, and lightly frothy.

  5. 5

    5. Taste and adjust with a little more honey or agave if you want it sweeter.

  6. 6

    6. Serve immediately in glasses over extra ice and garnish with fresh mint leaves.

Chef tips

For a finer texture, strain the drink before serving. If the melon is very cold, you will need less ice and the flavor will stay more concentrated.

Substitutions

You can substitute galia melon with honeydew or mild cantaloupe. Honey can be replaced with agave for a vegan version.
