Instructions
- 1
1. Heat 500 ml water until very hot but not boiling, about 175°F/80°C. Remove from the heat, add the jasmine tea, and steep for 3 minutes. Strain and cool completely.
- 2
2. Place the basil seeds in a bowl with 120 ml cold water. Let them soak for 10 to 15 minutes until a delicate gelatinous coating forms around each seed.
- 3
3. In a blender, combine the Asian pear, lime juice, agave syrup, fine salt, and 150 g ice. Blend until smooth.
- 4
4. Add the chilled jasmine tea to the blender and blend briefly just to combine.
- 5
5. Stir in the soaked basil seeds with a spoon so they distribute evenly without losing their texture.
- 6
6. Divide the remaining ice among 4 glasses. Pour the refresher over the ice and garnish each glass with thin lime slices and fresh basil leaves.
- 7
7. Serve immediately while very cold.
Chef tips
For a smoother texture, strain the pear mixture before adding the basil seeds. If you prefer a less sweet profile, reduce the agave syrup slightly and add a few extra drops of lime.
Substitutions
You can substitute the Asian pear with a ripe Bartlett or Conference pear. Agave syrup can be replaced with simple syrup or honey, though with honey the recipe would no longer be vegan.
