Instructions
- 1
1. In a small saucepan, heat the 500 ml water until very hot but not boiling, about 175°F/80°C. Remove from the heat, add the white tea, 1 rosemary sprig, and the lemon peel. Let steep for 4 minutes.
- 2
2. Strain the infusion into a heatproof pitcher. Add the honey while the liquid is still warm and stir until fully dissolved. Let it cool for 10 minutes.
- 3
3. Place the Bosc pear, red grapes, and fresh lemon juice in a blender. Add the tea infusion once lukewarm or cool, and blend until completely smooth.
- 4
4. Strain the mixture through a fine sieve, pressing gently to extract the liquid and discard the thicker pulp. Transfer the refresher to a large pitcher.
- 5
5. Add 2 small rosemary sprigs, lightly bruised between your hands to release their aroma. Refrigerate the pitcher for at least 10 minutes, or until thoroughly chilled.
- 6
6. To serve, fill 4 glasses with ice. Divide the chilled refresher among the glasses, filling each about two-thirds full.
- 7
7. Top each glass with chilled sparkling water, stirring gently so you do not lose too much carbonation. Garnish with rosemary tips and a few extra grapes if desired, and serve immediately.
Chef tips
If you want a more delicate flavor, reduce the rosemary to a single sprig during chilling. For a cleaner texture, strain twice.
Substitutions
You can replace the honey with agave syrup for a vegan version. Bosc pear can be swapped for Conference pear, and white tea for a mild green tea.
