1. Preheat the oven to 220°C / 425°F. Toss the potatoes with 1 tablespoon vegetable oil, half of the dried oregano, and 1/2 teaspoon salt. Spread them on a tray and roast for 30 minutes, turning halfway through, until golden and tender.
- 2
2. While the potatoes roast, season the turkey breast strips with ground cumin, black pepper, and 1/2 teaspoon salt.
- 3
3. Heat 1 tablespoon vegetable oil in a large skillet or wok over high heat. Sear the turkey for 4 to 5 minutes, stirring to brown it well. Remove and set aside.
- 4
4. In the same skillet, add the remaining tablespoon of vegetable oil. Add the red onion, fresh ají amarillo, and garlic. Stir-fry for 2 minutes over high heat to keep their texture.
- 5
5. Add the loche squash and cook 4 minutes more, stirring often. Then add the tomato and toss for 1 minute.
- 6
6. Pour in the red wine vinegar, soy sauce, lime juice, and chicken broth. Scrape the bottom of the skillet to release the caramelized bits and let it simmer gently for 2 minutes.
- 7
7. Return the turkey to the skillet along with the botija olives. Cook 3 to 4 minutes more, until the turkey is fully cooked and the sauce is lightly juicy. Adjust with the remaining salt if needed.
- 8
8. Turn off the heat and add the chopped cilantro and the rest of the dried oregano. Toss gently.
- 9
9. Serve the criollo turkey stir-fry hot with the oregano roasted potatoes on the side.
Chef tips
For the best flavor, do not overcrowd the pan when searing the turkey; if needed, cook it in two batches. The loche squash should be tender but not falling apart.
Substitutions
If you cannot find loche squash, use kabocha or butternut squash in the same amount. You can replace turkey breast with chicken. For a soy-free version, replace the soy sauce with more chicken broth and an extra pinch of salt.
