Instructions

  1. 1

    1. Season the chicken thighs on both sides with 4 g (3/4 tsp) of the salt and the black pepper.

  2. 2

    2. Blend the 60 g (2 packed cups) of cilantro with the passion fruit pulp, chicha de jora, and 250 ml (1 cup plus 1 tbsp) of the chicken broth until smooth and green. Set aside.

  3. 3

    3. Heat a wide pot or heavy casserole over medium-high heat. Add the vegetable oil and brown the chicken skin-side down for 5 to 7 minutes, then turn and cook 3 minutes more. Remove and reserve.

  4. 4

    4. In the same pot, lower to medium heat and add the 200 g (1 1/2 cups) chopped red onion. Cook for 5 minutes until softened. Add the garlic, ají amarillo paste, cumin, and dried oregano; cook for 2 minutes, stirring so the paste does not stick.

  5. 5

    5. Pour the blended cilantro and passion fruit mixture into the pot. Stir well, scrape the bottom, and let it come to a gentle boil for 3 minutes.

  6. 6

    6. Return the chicken to the pot with any collected juices. Add the remaining 250 ml (1 cup plus 1 tbsp) chicken broth, partially cover, and cook over medium-low heat for 30 to 35 minutes, until the chicken is tender and cooked through.

  7. 7

    7. Meanwhile, make the beans. Place a medium skillet or saucepan over medium heat and add the butter. Add the cooked canary beans, ají panca paste, the remaining 4 g (3/4 tsp) salt, and 60 ml (1/4 cup) water or a little bean cooking liquid if they seem too thick. Cook for 8 to 10 minutes, mashing a small portion of the beans to create a creamy texture.

  8. 8

    8. When the chicken is ready, uncover the pot and cook 5 minutes more if you want a slightly thicker sauce. Taste and adjust with the juice of 1 lime and, if desired, a little zest for freshness.

  9. 9

    9. If you want to keep the rice warm, place it in an oven-safe dish, cover with foil, and hold at 200°F / 95°C for up to 15 minutes.

  10. 10

    10. Serve a base of cooked white rice, arrange the creamy canary beans on top or alongside, and finish with the chicken covered in its sauce. Top with the sliced red onion and chopped cilantro.

  11. 11

    11. If you prefer to reheat the dish, warm it covered in the oven at 325°F / 165°C for 10 to 15 minutes, or until thoroughly hot.

Chef tips

For deeper flavor, let the chicken rest 15 minutes with the salt, pepper, and 1 tablespoon of the blended mixture before browning. If the passion fruit pulp is very tart, balance it with 1 or 2 extra tablespoons of broth.

Substitutions

You can use cilantro if you cannot find culantro, though the flavor will be less intense. Chicha de jora can be replaced with a mild lager or more broth. Canary beans can be substituted with cooked white beans.
