Instructions

1. In a small saucepan, warm the honey, water, fresh rosemary, and orange zest over low heat for 5 minutes, without bringing it to a strong boil; keep the mixture around 160-175°F (70-80°C).
- 2
2. Remove from the heat, cover, and let steep for 5 more minutes. Strain the syrup to remove the rosemary and orange zest, then let it cool completely.
- 3
3. In a large pitcher, combine the chilled Earl Grey tea, pomegranate juice, fresh orange juice, and the cooled honey-rosemary syrup. Stir until fully blended.
- 4
4. Fill 4 glasses with ice and add 2 thin orange slices to each glass.
- 5
5. Divide the tea and fruit mixture among the glasses, filling each about three-quarters full.

6. Top each glass with chilled sparkling water and stir gently so the drink keeps its fizz.
- 7
7. Garnish with a small sprig of fresh rosemary if desired and serve immediately, very cold.
Chef tips
For a bolder flavor, brew the Earl Grey slightly strong and chill it before mixing. If you prefer a cleaner texture, strain the fresh orange juice as well.
Substitutions
You can replace the honey with agave syrup for a vegan version. Rosemary can be swapped for fresh thyme for a softer herbal profile.
