Instructions

  1. 1

    Preheat the oven to 200°C / 400°F.

  2. 2

Place the diced red apple on a small baking tray, toss with the brown sugar, and roast for 18 to 20 minutes at 200°C / 400°F until tender and lightly caramelized.

  3. 3

While the apple roasts, lightly crush the juniper berries and place them in a heatproof pitcher or bowl with the black tea and lemon zest.

  4. 4

Heat the water until very hot, without needing a full boil, about 95°C / 203°F. Pour the water over the black tea, juniper, and lemon zest, and steep for 5 minutes.

  5. 5

Strain the infusion to remove the black tea, juniper berries, and lemon zest. Add the hot roasted apple to the strained infusion along with the maple syrup, lemon juice, and fine salt.

  6. 6

Blend the mixture until smooth and liquid. Then strain it again through a fine sieve for a cleaner texture.

  7. 7

Let the base cool at room temperature for a few minutes, then refrigerate it until thoroughly chilled, about 4°C / 39°F.

  8. 8

To serve, divide the ice among 4 glasses, pour in equal amounts of the chilled apple-tea base, top each glass with very cold sparkling water, and stir gently.

  9. 9

Garnish with the thin lemon slices and serve immediately.

Chef tips

If you want a drier soda, slightly reduce the maple syrup. For deeper flavor, let the apple brown well around the edges without burning.

Substitutions

You can use green apple for a tarter profile. Maple syrup can be replaced with honey if you do not need a vegan version. Black tea can be swapped for a mild pu-erh tea for a more earthy note.
