Instructions

  1. 1

    1. In a small saucepan, combine the apricots, water, sugar, lemon zest, the 4 fresh thyme sprigs, and salt.

  2. 2

    2. Cook over medium heat until the mixture reaches a gentle simmer, about 95-100 °C / 203-212 °F. Lower the heat and cook for 8 minutes, stirring occasionally, until the apricots are very tender.

  3. 3

    3. Remove from the heat and add the fresh lemon juice and vanilla extract. Let it infuse for 2 minutes so the thyme and vanilla can perfume the concentrate.

  4. 4

    4. Strain the mixture through a fine sieve, pressing on the apricots to extract all the liquid and some of the soft pulp. Discard the thyme sprigs and let the concentrate cool to room temperature.

  5. 5

    5. Chill the concentrate for at least 10 minutes, or until thoroughly cold, around 4-6 °C / 39-43 °F.

  6. 6

    6. To serve, divide the ice among 4 glasses. Add a portion of the chilled concentrate to each glass, then top with the well-chilled sparkling water.

  7. 7

    7. Stir each glass gently to combine without losing too much fizz. Garnish with the thin lemon slices and the small fresh thyme sprigs, and serve immediately.

Chef tips

If you want a cleaner texture, strain twice. For a stronger herbal note, let the thyme steep one extra minute before straining.

Substitutions

You can replace the sugar with the same amount of cane sugar. If you do not have fresh thyme, use 1/2 teaspoon dried thyme, but strain very well. Vanilla paste also works in the same amount.
