Instructions

  1. 1

    1. Prepare a strong rooibos infusion and let it cool completely before using.

  2. 2

    2. In a small saucepan, combine the water, sugar, and 6 fresh sage leaves. Cook over medium heat until it reaches a gentle boil, about 3 to 4 minutes. If you want to measure the boiling temperature, it will be about 212°F / 100°C. Remove from the heat and let it steep for 5 more minutes.

  3. 3

    3. Strain the syrup to remove the sage leaves and let it cool.

  4. 4

    4. Place the ripe persimmon in a blender with the blood orange juice, cooled rooibos tea, lemon juice, and sage syrup. Blend until completely smooth.

  5. 5

    5. If you prefer a finer texture, strain the mixture through a fine sieve to remove any persimmon fibers.

  6. 6

    6. Fill 4 glasses with ice, dividing it evenly among them.

  7. 7

    7. Divide the persimmon-rooibos mixture among the glasses, filling each a little over halfway.

  8. 8

    8. Top each glass with well-chilled sparkling water and stir gently to keep the bubbles lively.

  9. 9

    9. Garnish with the remaining 2 sage leaves, divided among the glasses, and add one thin blood orange slice to each glass if desired. Serve immediately.

Chef tips

For a more vibrant soda, chill the glasses for 10 minutes before serving. If the persimmon is very sweet, reduce the syrup sugar to 35 g.

Substitutions

You can replace blood orange with regular orange or red mandarin. Sage may be swapped for fresh basil, though the aromatic profile will change. If you do not have rooibos, use a mild decaffeinated black tea infusion, keeping in mind the flavor will be different.
