Instructions
- 1
1. Place the water in a small saucepan and heat it until very hot, about 185°F/85°C, without boiling. Add the loose-leaf oolong tea, turn off the heat, and steep for 4 minutes. Strain and set aside.
- 2
2. In the same saucepan, add the brewed tea, sugar, and finely chopped candied ginger. Cook over low heat for 5 minutes, keeping it at a gentle temperature near 195°F/90°C, until the sugar dissolves and the ginger perfumes the liquid. Let it cool for 10 minutes.
- 3
3. Place the chopped white peaches in a blender with the fresh lime juice and half of the fresh mint leaves. Blend until smooth.
- 4
4. Add the warm or cooled oolong-ginger concentrate to the blender and blend briefly to combine. For a smoother texture, strain the mixture if desired.
- 5
5. Divide the ice among 4 glasses. Pour the peach mixture into the glasses, filling each about halfway.
- 6
6. Add the remaining fresh mint leaves, lightly slapped in your hand to release their aroma, and top each glass with well-chilled sparkling water. Stir gently.
- 7
7. Garnish with thin lime slices, extra mint, and a little more candied ginger if desired. Serve immediately, very cold.
Chef tips
For stronger fizz, chill the glasses before serving. If the peaches are very sweet, reduce the sugar slightly to keep the lime balanced.
Substitutions
You can substitute white peaches with ripe yellow peaches for a deeper flavor. Oolong tea can be replaced with a mild black tea for a bolder profile. Mint can be swapped for spearmint.
